Objetivou-se caracterizar o perfil dos produtores de caprinos e ovinos de quatro mesorregiões do Estado do Ceará. O trabalho foi realizado nas mesorregiões dos Sertões Cearenses, Metropolitana de Fortaleza, Noroeste Cearense e Norte Cearense. Para coleta de dados, foi aplicado um questionário abordando questões sobre o perfil de 52 produtores. Nas mesorregiões Metropolitana e Noroeste Cearense prevaleceu a idade dos produtores entre os 36 a 50 anos. Nas demais mesorregiões, entre 51 e 65 anos e uma maior escolaridade (nível superior). Grande parte dos produtores adquiriu propriedade através de compra à vista entre os anos de 1996 a 2010 e apresentam experiência de 1 a 20 anos. O desenvolvimento da caprinovinocultura é observado pela inclusão de novos produtores na atividade. Profile of sheep and goat producers in four regions of Ceará State. Abstract: The objective was to characterize the profile of sheep and goat producers of four regions of Ceará State. The study was conducted in the Hinterlands of Ceará, Fortaleza Metropolitan Region and Northwest and North of Ceará. For data collection, it was used a questionnaire about the profile of 52 producers. In Northwest and Metropolitan Fortaleza Region, prevailed at the age of producers from 36 to 50 years old. In the other two regions, this value ranged from 51 to 65 years old, with a higher level of education of the producers (graduation level). Pproperties were acquired, mostly, by purchase in cash between the years of 1996 to 2010, by producers with an experience ranging from 10 to 20 years. Aging wine in oak barrels provides more complexity to the beverage, but due to the high cost of wood barrels, alternative aging methodologies such as the use of oak chips gain interest of winemakers in the new world of wines, particularly in the tropical regions. This paper reports the sensory profile and consumer perception of Syrah wine produced in the São Francisco Valley, Brazil, with the addition of American and French oak chips at different stages of the fermentation process. Higher intensity of color, coffee, woody, and sweet/caramelized aromas, sweet and woody taste were observed in the age wines as compared to a control wine (no chip addition). An affective sensory test (N= 129) revealed two segments of consumers exhibiting different attitudes to the wines: one group (N= 60) rejected all samples, whereas the other (N= 69) liked them moderately. In short, the findings provide relevant information for stakeholders in the new world of wine where oak barrels impact negatively on the cost of production of wines, as is the case in Brazil. |
